Shrimp-Stuffed Avocado Salad

Ingredients

  • 2 T. Mayonnaise,
  • 2 T. light cream
  • 1 T. cream cheese.
  • pinch freshly ground black pepper
  • Pinch sea salt
  • 1/2 cup cooked small shrimp
  • 3 T. finely diced celery
  • 3 T. finely diced cucumber
  • 2 T. chopped fresh dill
  • 1 t. finely diced onion
  • 2 avocados
  • paprika
  • 4 cups mixed salad greens

Directions

  1. In a medium bowl, combine the mayo, light cream, cream cheese, pepper, and salt, mix well.

  2. Add the shrimp, celery, cucumber, dill, and onion. Stir well, cover and refrigerated for at least 1 hr.

  3. Slice the avocados in half lengthwise and remove the pits. Spoon equal amounts of the shrimp mixture onto each avocado half. Sprinkle each avocado half with paprika.

  4. Divide the greens equally among 4 serving plates. Place one stuffed avocado half on each plate and serve.
