LOW CARB “PEANUT BUTTER CUP” SQUARES

Ingredients

  • 1 cup butter, melted
  • 1 1/3 cup low carb whey protein powder, vanilla flavor (4 scoops)
  • 1 cup Splenda
  • 1/2 teaspoon stevia extract
  • 1 cup natural sugar-free peanut butter
  • Topping:
  • 1/3 cup sugar-free chocolate chips
  • 1/4 cup natural sugar-free peanut butter
  • Can sub for chocolate chips:
  • 1/8 cup butter
  • 1.5 oz unsweetened chocolate
  • 1 tbsp powdered erythritol (I used Swerve)
  • 1 tbsp cocoa powder
  • 1/4 tsp vanilla extract
  • 6 drops stevia extract

Directions

  1. 11×7 baking dish.

  2. In medium bowl, mix the butter, whey protein powder, slpendar, stevia and peanut butter together. Spread mixture in the bottom of prepared pan. Freeze 30 minutes or until solid.

  3. Melt chocolate chips with the peanut butter, stirring until smooth. Pour melted chocolate over peanut butter mixture and spread evenly to cover top.

  4. Refrigerate for at least an hour before cutting into squares. Keep in the refrigerator for snacking.
