GAPS Fiesta Chicken Salad

Prep time: 10 minutes
Cook time: 15 minutes
Serves 4 people

Ingredients

  • 1 cup white navy beans, soaked overnight
  • 1 garlic clove
  • 1/4 portion of an onion
  • 1 cup red pepper
  • 1/2 of a whole chicken
  • 1 teaspoon Coconut Aminos
  • black pepper, garlic powder, salt
  • 5 cups mixed leaf lettuce
  • 1 tomato
  • Favorite Dressing

Directions

  1. Soak white beans overnight. Drain and rinse beans. Put beans in a pot with filtered water; just enough to cover with 1" over. Add garlic and onions and cook for about an 1 or until done.

  2. Season chicken with Coconut Aminos, garlic, salt, and pepper. Allow to marinade for 30 minutes,if time allows.

  3. Grill or broil chicken along with the red pepper until done. Cut into bite-size pieces.

  4. Toss the mixed lettuce greens with your favorite dressing. Top with beans, chicken, &, tomatoes
