Yellow Cake from Scratch

Ingredients

  • 4 eggs, separated
  • 1 cup milk
  • 3 cups cake or Pastry flour
  • 4 teaspoon baking powder
  • 1/2 t. salt (use 1/4 if using salted butter)
  • 1 cup (2 sticks) butter
  • 2 cups sugar
  • 1 t. vanilla extract

Directions

  1. Preheat oven to 350F. Make sure all ingredients are room temperature. Butter the cake pans and line the bottom of each with parchment paper. Butter the paper and dust the pans with flour, tapping out the excess.

  2. Separate the eggs. Measure the milk

  3. Sift and measure the flour; stir in baking powder, salt and mix well

  4. In another bowl, beat the butter until light and fluffy; add the sugar and cream until light and fluffy. Beat in the 4 egg yolks, one at a time, and add the vanilla.

  5. Add the flour mixture and milk alternately, starting and ending with one third of the flour. STIR JUST UNTIL FLOUR IS INCORPORATED.

  6. In another bowl, whisk the egg whites to soft peaks. STIR one third of the egg whites into the batter, then gently FOLD in the rest.

  7. Pour into prepared pans and bake until a toothpick inserted comes out clean, 30 to 40 minutes

  8. make this an orange cake by adding 1 T. finely grated orange zest and 2 t. orange juice to batter. Top with whipped cream and sliced strawberries.
