Avocado Corn Salsa

I made a few of my own additions/changes to the original recipe.

Ingredients

  • 2 cans corn, drained
  • 1 small can black beans, rinsed and drained (didn't use quite a full can)
  • 1 SMALL jalapeno, seeded and finely minced
  • 1/2 medium red onion, diced
  • 2 tablespoons chopped fresh cilantro leaves
  • 3 tablespoons freshly squeezed lime juice
  • 1 heaping tablespoon sugar
  • 1/4 teaspoon salt
  • 2 avocados, halved, seeded, peeled and diced

Directions

  1. In a large bowl, whisk together lime juice, sugar and salt. Gently stir in diced avocados.

  2. Add remainder of ingredients, folding together gently.

  3. Serve with chips as a side to Mexican dinner. (I used Tostitoes Scoops.)
