Roasted Duck Breast

Ingredients

  • One pound duck breast
  • Spicy Schezuan sauce
  • Cast Iron Skillet

Directions

  1. Take duck out and score the fatty side about 1/3 inch apart in a criss cross pattern across the breast.

  2. Let sit out to reach room temperature for up to 30 minutes for even cooking

  3. Heat skillet to a medium high heat

  4. Place duck breast fatty side down on the skillet and let sit uncovered for 8-10 minutes

  5. Flip breast on lean side and let cook another 6-10 minutes

  6. Internal temperature should be around 160

  7. Brush schezuan sauce onto the fatty side of the breast and put into the pre-heated oven (350) for 6-8 minutes and then place onto a cutting board to rest for 10 minutes before cutting into medallion sized pieces
