Rice-otto

Cook time: 20 minutes
Serves 4 people

Ingredients

  • 1 1/2 cup dry brown rice
  • about 2 cups chicken broth
  • 1 package mushrooms sliced
  • 1 small onion
  • 1/2 cup parmesan cheese
  • 1/3 stick butter
  • Pan spray
  • Salt and pepper to taste

Directions

  1. Cook rice

  2. Saute onion and mushroom in pan spray

  3. add rice and chicken broth to pan in parts – not all at once

  4. Stir and simmer until rice absorbs most of the chicken broth

  5. stir in butter and parmesan cheese

  6. Salt and pepper to taste
