Molasses Cutouts

Ingredients

  • 1/2 c. shortening
  • 2/3 c. sugar
  • 2 tsp. fresh grated nutmeg
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. mild-flavor molasses
  • 1 egg
  • 1 TBSP. apple cider vinegar
  • 2 1/2 c. flour

Directions

  1. In a large mixer bowl beat shortening for 30 seconds (medium high). Add sugar, nutmeg, baking powder, and salt. Beat until combined, scraping bowl occasionally. Beat in molasses, egg, and vinegar until combined. Beat in as much of flour as you can with the mixer. Stir in any remaining flour. Divide dough in half. Cover and chill overnight.
  2. Preheat oven to 350*. Line baking sheets with parchment. On a lightly floured surface roll half the dough at a time to 1/8" thick. Cut out cookies into desired shapes. Place 1" apart on prepared sheets.
  3. Bake in preheated oven for about 8 minutes (less for smaller cookies/ more for larger cookies) until bottoms are light brown. Cool for 1 minute. Transfer cookies to wire rack; cool completely.
  4. 36-48 cookies approx.
