Blondies

Ingredients

  • 2 1/2 sticks unsalted butter +extra
  • 2 1/4 cups all purpose flour +extra
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp salt
  • 2 cups packed light brown sugar (400g)
  • 1/2 cup granulated sugar
  • 3 large eggs (half recipe: 1 egg & 1 yolk)
  • 2 1/2 tsp pure vanilla extract
  • 1 cup chopped walnuts (probably too much - and little pieces are too small)
  • 1 cup toffee bits (or 1 cup chocolate chunks)

Directions

  1. Preheat oven to 350

  2. Butter a 9 × 13 pan, line with parchment, butter, and then flour

  3. Cook butter over medium heat until golden brown and let cool

  4. Whisk together flour, baking powder, and salt

  5. Combine browned butter, sugars, and stir until combined

  6. Add eggs

  7. Beat on medium-high speed until light and fluffy (about 3 minutes)

  8. Add vanilla and beat to combine

  9. Add flour mixture, walnuts, and toffee bits, and mix until thoroughly combined

  10. Pour into prepared pan

  11. Bake 35-40 minutes until a toothpick comes out clean

  12. Store in airtight container at room temperature for up to 3 days
