Soy Tofu Stir-Fry w/ Roasted Vegetables

Ingredients

  • 1 brick extra-hard tofu, pressed into paper towels for 5 mins to release some water. Cut into two slabs and cut into 1/2 inch cubes ish.
  • 1 head broccoli
  • 1/2 head cauliflower
  • 15 brussels, prepared and halved
  • 2 garlic cloves

Directions

  1. Marinate Tofu for 30 mins in 3T Lite-Sodium Soy Sauce and 1T Olive Oil, with pinch of salt & pepper.

  2. Cut bite-size vegetables (broccoli, cauliflower, brussels sprouts -consider mushrooms next time) and place them on baking sheet covered with foil. Drizzle with olive oil & pressed garlic (no salt, pepper, soy)

  3. Place in oven at 400-425 for 25 minutes. With 10 mins remaining, flip veggies and drizzle with soy sauce.

  4. At that point, saute the marinated tofu for 8-10 minutes in olive oil so that it’s brown on all sides.

  5. Combine and serve hot.
