Rice Meatballs

Cook time: 20 minutes
Serves 6 people

Ingredients

  • 1 egg, lightly beaten
  • 1/2 cup uncooked rice
  • 2 tablespoons finely chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound lean ground beef (90% lean)
  • 1/2 envelope lipton onion soup
  • 2 cups water
  • 1 tablespoon of flour or cornstarch mixed in water to thickened the broth into gravy

Directions

  1. Combine the ground beef with egg, onions, salt, pepper, and rice. Mix it well and form into meatballs.

  2. Add olive oil to a skillet and brown the meatballs. Only brown them not cook them.

  3. In the meantime, combine the 2 cups of water with the lipton onion soup and bring to a boil.

  4. Add the hot soup to the meatballs, cover and cook until rice is cooked, about 15 to 20 minutes. Just before you take it off the stove, add the thickener and cook it just until it becomes gravy-like
