Pecorino Toastie

  • 2 tbsp each olive oil and unsalted butter, softened
  • 1/2 tsp minced lemon zest
  • 1/4 tsp dried oregano
  • 1 demi baguette, halved lengthwise
  • 2 tbsp grated pecorino
  • chopped fresh parsley


  1. Preheat broiler to high with rack 6 inches from element. Line a baking sheet with foil.

  2. Combine oil, butter, zest and oregano; spread on cut sides of baguette and arrange on prepared baking sheet.

  3. Sprinkle pecorino over butter mixture. Broil bread until golden, 2 minutes; garnish with parsley.
