Beef Guiso

Serves 4 people

Ingredients

  • 1 lb beef, chuck roast or seven steak diced
  • 1 T. butter, beef tallow,or lard
  • 1/2 cup diced onion
  • 1 tsp. ground cumin
  • 1/2 tsp. ground pepper
  • 1 garlic clove, mashed
  • 1-1/2 cup diced tomato
  • 2 cups of liquid ( 1 cup beef broth/1 cup filtered water )
  • Salt to taste

Directions

  1. Cut beef into bite size pieces. In a skillet, add the fat and let it heat up enough to make the meat sizzle when you put it in the skillet. Add the onions and saute along with the meat until meat is brown and onions are soft.

  2. Combine the seasonings with the tomatoes and water. Add to the meat. Add the salt , let it come to a boil, then simmer for about 30 to 45 minutes until beef is tender. You can thicken the sauce with potato starch mixed with water for a gravy-like thicker sauce.

  3. Note: You may have to add more water to make more sauce.
