Thai Chicken Pizza

Ingredients

  • 2 garlic cloves, peeled
  • 2 tbsp minced fresh ginger
  • 1/4 cup soy sauce
  • 3 tsp sesame oil
  • 1/2 tsp fish sauce
  • 1 1/2 cups smooth peanut butter
  • 1/2 cup very warm water
  • 4 tbsp Thai chili paste
  • 2 chicken breasts
  • Salt and black pepper to taste
  • 1 recipe Pizza Dough
  • Olive oil, for drizzling
  • 4 tbsp Thai sweet chili sauce
  • 12 oz fresh mozzarella, thinly sliced
  • 1 cup bean sprouts
  • 2 cups shredded carrots
  • 2 cups cilantro leaves
  • 1/2 cup chopped peanuts

Directions

  1. Preheat the oven to 500 and arrange the oven rack at the lowest position.

  2. First, make the peanut sauce: To the bowl of a food processor, add the garlic, ginger, soy sauce, sesame oil and fish sauce. Next add the peanut butter and the water. Blend as you’re pouring it in. Check the consistency, give it a taste, and add a little more of whatever it needs. Add a little chili paste.

  3. Next, sprinkle the chicken with salt and pepper and grill them on both sides until done. Remove from grill and slice thin.

  4. To assemble the pizza, roll out the dough and place onto a baking pan drizzled with olive oil. Spread 4 tbsp sweet chili sauce all over the dough. Lay on the mozzarella slices, then the chicken slices.

  5. Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly.

  6. Throw on as many spouts as you’d like. Next, add the shredded carrots and cilantro leaves. Drizzle the peanut sauce all over the top of the pizza. End with a sprinkling of chopped peanuts.
