red lentil curry with coconut milk

Ingredients

  • 4TBS veg oil
  • 2 TBS minced garlic
  • 2 TBS minced fresh ginger
  • 4 tsp curry powder
  • 2 tsp turmeric
  • 2 cups coconut milk
  • 2 cups dried red lentils
  • TBS sugar (or to taste)

Directions

  1. saute garlic and ginger and curry and turmeric. add coconut milk and lentils. simmer (don’t boil) till lentils are mushy
