Fish Cajun Fillets

Ingredients

  • 60 g skim-milk powder
  • 1 cup water
  • 1 tablespoon paprika
  • 2 teaspoon turmeric
  • 1 teaspoon chilli powder
  • 800 g white fish fillets (whiting, snapper, flathead)
  • 2 tablespoon olive oil
  • 400 g Natural Yoghurt
  • 1 small cucumber, finely diced

Directions

  1. Preheat oven 200c and line baking tray with baking paper.

  2. Mik milk powder and water ina small bowl. In a separate bowl mix ground spices.

  3. Dip fish fillets into the milk then roll them in the mixed spices.

  4. Heat oil in a frying pan over high heat. Rapidly fry the fish in batches for 2 minutes each side or until golden. Be careful no to overcrowd the pan as the fish will stew.

  5. Place all fillets on prepared tray and bake for 5 minutes.

  6. Mix yoghurt and cucumber and lightly season. Serve with lemon wedges and yoghurt sacue and with vegetables or salad.
