Roasted Balsamic Beets

Prep time: 20 minutes
Cook time: 50 minutes
Serves 8 people

Ingredients

  • 10 medium-size beets, tops removed and scrubbed
  • 1/2 cup balsamic vinegar
  • 1/2 cup good olive oil
  • 2 teaspoons Dijon mustard, such as Grey Poupon
  • Kosher salt and freshly ground black pepper to taste

Directions

  1. Preheat oven to 400 F.

  2. Put beets in a bowl; add olive oil and coat well. Put them in a baking pan and cover it with foil; Make sure foil is tightly wrapped so that beets cook well. Roast them for about 45-50 minutes depending on size. You can check periodically.

  3. Prepare your dressing by combining the rest of the ingredients.

  4. Allow the beets to cool just enough for you to be able to handle them to peel them. Cut them into slices and add them to the dressing while warm if possible.

  5. Put them in jars and refrigerate them.

  6. NOTE: If you like them a little sweeter, add a tablespoon of maple syrup or more honey mustard.
