Poblano Chicken With Peanuts

Serves 4 people

Ingredients

  • 3 oz of peanut oil
  • 2, 6-8 oz boneless chicken breast, cut into strips
  • 4 roasted poblano pepper, skins and seeds removed
  • 1 cup cilantro
  • Salted peanuts, to taste

Directions

  1. In a saucepan over medium heat, heat the oil for 30 seconds; add chicken. Cook for about 1 minute on each side.

  2. In a blender, add peppers, cilantro and 1 cup of water. Puree for 1 minute.

  3. Add pepper puree to the chicken and cook for about 3 more minutes. Add the peanuts, stir well and serve
