Tomato and Rice Bake

Ingredients

  • 1 onion, chopped
  • 1 cup uncooked rice
  • 4 Tbsp. butter or margarine
  • 1 (15 to 16oz.) can whole tomatoes OR equivalent fresh tomatoes
  • 2 cups chicken broth or beef broth

Directions

  1. Saute the onion and rice in butter until the rice is nicely browned. Drain excess liquid from tomatoes and place tomatoes in a 9 × 13-inch baking dish.
  2. Combine rice and onion mixture with the broth and pour over tomatoes. Do not stir. Cover tightly with foil and bake at 350 degrees for 1 hour or until tomatoes are tender and rice is cooked through.
