Ingredients

  • 1 lb. potatoes
  • 1 onion, finely diced
  • 3 cloves of garlic, minced
  • 1 tsp. oil
  • 1 pint water
  • 1 fresh hot pepper (Scotch Bonnet)
  • salt to taste

Directions

  1. In a large pot of water, cook peeled and washed potatoes until soft. Drain them, then return to the pot and add salt.

  2. In a small skillet, heat oil and add onion and garlic and saute until soft. Add the hot pepper, then quickly mix this in with the mashed potatoes and serve.
