Tomato Basil Pie

Serves 8 people

Ingredients

  • 3 pound sliced tomatoes
  • 2 Tblspoons chopped chives
  • 1/4 cup chopped basil
  • 3/4 cup shredded cheddar
  • 2/3 cup mayonnaise
  • 1/2 cup cheddar cheese
  • two pie crusts for top and bottom

Directions

  1. Make pie crust:

  2. Preheat oven to 350 F

  3. Slice tomatoes and cook them in high heat until most of the liquid is gone.

  4. Divide dough in halves and roll on floured surface. Fit half the pastry into a 10-inch greased pie plate.

  5. Mix tomatoes, herbs, salt and 1/2 cup cheese in a bowl. Spoon into prepared pie plate. Spread mayo over tomato mixture, and sprinkle with remaining 1/2 cup cheese.

  6. Top with remaining pastry, sealing edge and cutting vents.

  7. Bake at 350 for 45 to 60 minutes or until browned and bubbly.
