Fruit reduction for cheesecake

A rich reduction made with wine, perfect for using in other recipes or as a topping

Ingredients

  • 2 cup fruit flavored wine - I recommend a very sweet wine
  • 1-2 tbsp cornstarch
  • 2-3 tbsp cold wine

Directions

  1. Over medium high heat, bring 2 cup wine to a boil for 2-3 minutes

  2. In a separate bowl, mix 1 tbsp cornstarch and approx 1 to 1 1/2 tbsp wine until cornstarch is fully dissolved

  3. Add cornstarch mixture to wine

  4. Heat stirring constantly

  5. Boil 2 – 3 minutes

  6. If it is not thickening enough, repeat cornstarch procedure again.

  7. Sauce should begin to thicken as it boils, giving a gummy like appearance.

  8. Remove from heat and let cool, sauce will thicken further as it cools

  9. Mix into cheesecake, or use as sauce topping for prepared cheesecake
