Buttermilk Biscuits

Ingredients

  • 2 1/2 cups self-rising flour
  • 2 tbsp. sugar
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup cold whole buttermilk
  • 2 tbsp. unsalted butter, melted

Directions

  1. Preheat oven to 425. Line a baking sheet with parchment paper.

  2. In a large bowl, stir together flour and sugar. Using a pastry blender or 2 forks, cut in cold butter until mixture is crumbly. Stir in buttermilk just until combined.

  3. Turn out dough onto a heavily floured surface. Fold dough in half until it comes together, 3 or 4 times. Pat or roll dough to 1 inch thick. Using a 2 1/2-inch round cutter dipped in flour, cut dough without twisting cutter, rerolling scraps as necessary.

  4. Place biscuits 2 inches apart on prepared pan. Freeze until cold, about 10 minutes. Brush with melted butter. Bake until golden brown, about 12 minutes.
