Chocolate Chunk Oat Cookies

Quick to make, delicious to eat!
Using a mid-sized icecream scoop for sizing
biscuits is ideal I find.
Proactiv is a plant sterol spread, or Olivani is another alternative for those who can’t use butter for health reasons or choice.

Cook time: 20 minutes
Serves 40 people

Ingredients

  • 250 g butter (I use Proactive Buttery spread), softened
  • 3 T sweetened condensed milk
  • 3/4 C raw sugar
  • 1 1/2 C plain flour
  • 1 1/2 C rolled oats
  • 1 t baking powder
  • 200 g dark or milk chocolate, roughly chopped (or use chocolate chunks or drops)
  • Optional: 1/2 C dried cranberries, raisins, cheeries

Directions

  1. Beat butter, sugar and condensed milk together until pale and creamy.

  2. Add remaining ingredients, stir until combined.

  3. Place rounded tablespoons into balls, place on baking paper lined tray, and flatten slightly with a fork.

  4. Bake 20-25 minutes at 180o conventional over or 160o fan-forced, until golden brown.

  5. Cool on wire rack, store in airtight container.
