Muffuletta Dutch Baby

Ingredients

  • 3/4 cup flour
  • 1/2 tsp kosher salt
  • 1/4 tsp each red pepper flakes and black pepper
  • 4 eggs, room temp
  • 3/4 cup whole milk, room temp
  • 1 tsp Dijon
  • 1 cup shredded provolone
  • 2 tbsp. unsalted butter
  • 3 oz. thinly sliced salami
  • 3 oz. thinly sliced ham
  • 1/3 cup chopped fresh tomatoes
  • Chopped fresh parsley

Directions

  1. Preheat oven to 425 with an 8-inch cast-iron skillet on the center rack.

  2. Combine flour, salt, pepper flakes and black pepper in a bowl.

  3. Whisk together eggs, milk, and Dijon. Whisk egg mixture into flour mixture until combined; stir in 1/2 cup provolone.

  4. Remove skillet from oven and add butter, swirling to coat bottom and sides. Layer half the salami and ham in bottom of skillet; pour egg mixture over meat.

  5. Bake Dutch baby until puffed and golden brown around edges (center will still be custardy), 16-18 minutes. Remove skillet from oven. Preheat broiler with rack 6-inches from element.

  6. Layer remaining salami and ham over Dutch baby; top with remaining 1/2 cup provolone and broil until cheese melts, 2 minutes.

  7. Garnish Dutch baby with tomatoes and parsley.
