Honey Glazed Five Spice Chicken

Ingredients

  • 1 TB Chinese five spice power
  • 1 TB salt
  • 1 whole chicken, approximately 3 1/2 lbs
  • 2 TB butter
  • 2 TB honey

Directions

  1. Preheat oven to 350°F.

  2. Mix salt and five spice powder together. Rub all over cleaned chicken and inside the cavity of the chicken. Place chicken on a rack, breast side up, in a roasting pan. Pour one cup of water in bottom of pan.

  3. Place in the oven for 1½ hours. Increase oven temperature to 450°F. Melt the butter and combine with the honey. Remove the chicken from the oven and brush half of the glaze all over. Return the chicken to the oven for five minutes. Remove and brush the remaining glaze over it. Return to the oven for about five minutes, until the chicken is crispy, well browned and a instant read thermometer registers 170° in the breast meat and 180° in the thigh meat.

  4. Remove from the oven and let rest for 15 minutes before carving.
