Kiwi Pepper Salsa

Ingredients

  • - 3 tablespoons Mick's Red Pepper Jelly
  • - 1 tablespoon cider or raspberry vinegar
  • - � teaspoon kosher salt
  • - 6 large kiwi, peeled and diced � -inch (about 1 � to 2 cups)
  • - � cup minced red pepper
  • - � cup minced red onion
  • - � cup coarsely chopped cilantro

Directions

  1. In a small bowl, stir together the jelly, vinegar and salt until well-combined. Add the remaining ingredients and toss gently until well-combined. Serve immediately.

  2. Chef’s note: Great as a unique salsa to serve with corn chips or jumbo prawns for an appetizer. Or, top grilled chicken, pork chops or fish.
