Baked Vegetable Medley

Serves 10 people

Ingredients

  • 1 1/2 cups fresh corn (about 3 ears)
  • 3/4 cup peeled, chopped tomato
  • 1/2 cup cornmeal
  • 2 cups (8 oz.) shredded Cheddar cheese
  • 1 medium onion, chopped
  • 1 medium-size green pepper, chopped
  • 2 eggs, beaten
  • 3/4 cup milk
  • 1/2 tsp. salt
  • dash of pepper

Directions

  1. Combine first 6 ingredients; let stand 30 minutes. Spoon into a lightly greased 12 × 8 × 2-inch baking dish.

  2. Combine remaining ingredients; pour over vegetables. Bake at 325 degrees for 35 to 40 minutes or until set.
