Summer pasta salad w/artichoke and sun dried tomato

  • Jar sun dried tomatoes in oil
  • Jar marinated artichoke hearts
  • Two cloves garlic
  • Half cup chopped red onion
  • Fresh mozzarella salad balls
  • Salt and pepper
  • Pasta of your choice, not noodles


  1. Roast artichoke hearts and minced fresh garlic in the oven for 20 min on 350 degrees

  2. Boil pasta to Al dente firmness

  3. Chop sun dried tomatoes and toss with pasta once out of the water

  4. Mix in artichokes and garlic

  5. Mix in some of the oil

  6. Let cool in the refrigerator

  7. Salt and pepper to taste and add mozzarella

  8. Toss again before serving
