Meatless Loaf
This has the advantage of being very robust. Many nut roasts and rissoles tend to crumble and fall apart easily, unless served directly on to a plate, whereas this easy meatless loaf will hold together well. No extra seasoning is really needed.

Ingredients

  • 1/2 large pack of Sosmix or other soya protein burger mix
  • 1/2 pint cold water
  • 1 large onion
  • 1tbsp fresh sage (or one teaspoon dried)
  • 1 dessertspoon fresh parsley
  • 2 medium tomatoes
  • 1 free range egg
  • 2 crusts wholemeal bread

Directions

  1. Set oven to 325°F/180°C/gas mark 4.

  2. 2 Pour the water into the Sosmix, stir lightly and leave for 5 mins.

  3. 3 Meanwhile peel and chop the onion and tomato into small chunks and finely chop the herbs. Grate the bread or reduce to crumbs in a blender.

  4. 4 Finally, mix all the ingredients together in a bowl including the beaten egg. Season lightly if required.

  5. 5 Lightly grease a baking tray and form the mixture into a loaf shape in the middle.

  6. Bake in the centre of the oven for approximately 25 minutes or until firm and lightly brown. When cool, slice thickly and wrap in greaseproof paper.

  7. Variations – Try a large tablespoon of green vegetarian pesto sauce instead of the sage and parsley, and a crushed clove of garlic.

  8. Or try a large dollop of horseradish sauce and mushrooms to replace the herbs and tomato.
