Quinoa and Black Bean Patties

Ingredients

  • 1 cup Boiled Quinoa
  • 1 cup Boiled sweet potatoes
  • 1 cup Black Beans
  • 1/2 cup Frozen Corn Kernels
  • 1 cup Gluten-free Oats flour
  • 1 small onion chopped
  • 1.5 teaspoon Chili powder (adjust according to taste)
  • 1/2 teaspoon Paprika
  • 1 teaspoon Coarsely crushed black peppercorns
  • 2 tablespoon Lemon Juice
  • 3 tablespoon Cilantro leaves
  • 1 tablespoon Crushed Garlic or Garlic powder (optional)
  • Salt to taste
  • 2-3 tablespoon Oil to cook patties

Directions

  1. Assemble ingredients and spices.

  2. Combine water and quinoa in a pan. Bring it to a boil.

  3. Cover and let it simmer on low heat for 12- 15 minutes.

  4. Uncover the quinoa and fluff it with a fork to carefully separate the cooked grains.

  5. Measure oats flour.

  6. Toss everything in a food processor/blender leaving out quinoa and oats flour.

  7. Pulse until smooth.

  8. Mix in quinoa and add oats flour and mix it well. Adjust seasonings to taste.

  9. Shape into patties.

  10. Lightly oil a skillet and cook the patties on a medium heat.

  11. Flip the patties with a spatula and continue to cook until crunchy and crispy.
