Zucchini-Ribbon Pizza with Chicken

Ingredients

  • 12-in. prebaked whole-grain pizza crust
  • Cooking spray
  • 2 tbsp. olive oil, divide
  • 5 tsp. ground coriander, divided
  • 1 tsp. black pepper, divided
  • 8 oz. rotisserie chicken breast, shredded
  • 1/3 cup feta cheese, crumbled
  • 1 medium zucchini, halved lengthwise, seeded and shaved into long ribbons
  • 1/4 cup fresh cilantro leaves

Directions

  1. Preheat oven to 450 with oven rack in middle.

  2. Place crust on baking sheet; coat both sides of crust with cooking spray. Place pan in oven; immediately reduce temp to 425. Bake at 425 for 14 minutes, flipping the crust halfway through cooking. Remove pan from oven.

  3. Preheat broiler to high.

  4. Combine 1 tbsp. oil, 1 tbsp. coriander, 1/2 tsp pepper, and chicken in a bowl; toss to coat. Top crust with chicken mixture, leaving a 1/4-inch border. Sprinkle feta evenly over pizza. Broil 2 minutes or until the crust is golden and crisp.

  5. Combine remaining 1 tbsp. oil, remaining 2 tsp coriander, remaining 1/2 tsp pepper, and zucchini in a bowl; toss to coat. Top pizza with zucchini mixture; cut pizza into 8 slices. Sprinkle with cilantro.
