Granola

Ingredients

  • 1/2 c olive oil
  • 1/2 c. brown sugar
  • 1/2 c. real maple syrup
  • 1 TBSP. Vanilla
  • 1/2 tsp. salt
  • 4 c. old-fashioned rolled oats
  • 1 c. pecans (chop)
  • 1 c. pepitas
  • 1 c. slivered almonds
  • 1 c. sweetened flaked coconut
  • 1 c. craisins
  • 1 c. dried apples or pears
  • 1 c. dried apricots

Directions

  1. Preheat oven to 350*. Line two baking sheets with parchment. In a saucepan, heat oil, sugar, maple syrup, vanilla and salt over medium-low heat until sugar dissolves.

  2. Remove from heat and set aside. In a separate bowl, use your hands to combine oats, nuts, seeds, and coconut. Pour the wet mixture over oats mixture and mix until thoroughly combined. Divide the granola between the two baking sheets and spread in a single layer. Bake until golden, about 30 minutes, stirring and rotating pans every 10 minutes. Once cooled, mix in dried fruits.
