Southwest Black Bean Salad

Ingredients

  • 2-15 oz can of black beans, rinsed & drained
  • 3 small roma tomatoes, diced
  • 1 cup diced red onion
  • 2-3 limes
  • 1 cup cilantro, chopped
  • 1/2 t. ground cumin
  • salt to taste

Directions

  1. drain and rinse the beans.

  2. Combine diced tomatoes, onions, cilantro, cumin, salt and lime juice. Add to the black beans. Mix well

  3. Refrigerate until use.
