Oatmeal Bread

For the bread machine, with my adjustments :)

Ingredients

  • 1 1/2 C buttermilk, 80-90 degrees F
  • 1 egg
  • 2 T unsalted butter, 1/2" pieces at room temperature
  • 1 T apple cider or apple juice concentrate
  • 1 1/2 tsp salt
  • 4 T raw honey or 2 T real maple syrup
  • 3 C bread or regular flour
  • 2/3 C whole wheat flour
  • 3/4 C course ground old-fashioned oats
  • 2 1/4 tsp yeast, active dry, instant or bread machine

Directions

  1. White Bread Cycle, but I use Dough cycle, take out, shape, rise, bake in my oven. This is for a 2 lb loaf.

  2. Place all ingredients, in the order listed, in the bread pan fitted with the kneading paddle.

  3. Place the bread pan in the bread maker.

  4. Press Menu and select Dough. Start.

  5. Check about 6 minutes in the mixing to see if it needs more moisture or flour. (Depends on the humidity that day!)

  6. I let my machine do the mixing and kneading, then I shape and let rise for final time, then bake.

  7. 350 degrees F, approx 25 minutes
