Cheesecake

I leave out about 1/2 cup batter. If cake cracks… pour this extra batter in crack and it will “cook” from heat of cake. If you are topping cake omit this step.

Ingredients

  • Crust:
  • 16 double Graham Crackers
  • 1 1/2 t. sugar
  • 4 t. melted butter
  • 1/2 c. fine ground nuts
  • Cake:
  • 3- 8 oz. packages of cream cheese (softened)
  • 5 eggs at room temperature
  • 1 c. sugar
  • 1 1/2 t. vanilla
  • Topping (N.Y. Style)
  • 8 oz. sour cream
  • 1/2 c. sugar
  • 1/2 t. vanilla

Directions

  1. Mix crust ingredients and press into 9" spring-form pan. ( I line my pan with parchment)

  2. For the cake…Place cream cheese in mixer and mix on medium speed until soft. Scrape down bowl as needed. SLOWLY add sugar and mix until incorporated. Scrape down bowl. Add eggs 1 at a time. Scrape down bowl after 3 eggs are added. Continue adding eggs until mixed thoroughly. Scrape down bowl. Add vanilla. Pour batter over crust. Bake @ 350* 30 40 min or until cake is set and dry in center. (it may jiggle slightly. Cool completely.

  3. Mix topping ingredients and pour over cake. Spreading smooth and leaving about 1/2" border on cake. Bake 5-7 min. longer or until set.
