Cranberry Bread

Serves 16 people

Ingredients

  • 2 C all-purpose flour
  • 2/3 C sugar
  • 1 1/2 t baking powder
  • 1 t salt
  • 1/2 t baking soda
  • 1/4 C butter, chilled
  • 1 egg, beaten
  • 1 or 2 t orange zest
  • 3/4 C orange juice
  • 1 1/2 C light raisins (opt.)
  • 1 1/2 C fresh or frozen cranberries, chopped

Directions

  1. Preheat oven to 350 degrees F. Prepare loaf pan.

  2. Sift flour, sugar, baking powder, salt & baking soda into a large bowl.

  3. Cut in butter until mixture is crumbly.

  4. Add egg, orange zest, & orange juice all at once; stir just until mixture is evenly moist.

  5. Fold in raisins & cranberries.

  6. Spoon into greased 9 × 5 × 3 inch loaf pan. Bake for 1 hour and 10 min., checking at 1 hour for doneness with a toothpick.

  7. Remove from oven and cool for 5 min. in pan. Remove from pan and cool on wire rack.
