Rum Spiced Mixed Nuts

Ingredients

  • 2-3 cups sugar (2 Tbsp)
  • 2 cups water (1/4 cup)
  • 1-2 Tbsp vanilla
  • 1-2 Tbsp grated nutmeg
  • 1-2 Tbsp cinnamon
  • 1-2 Tbsp roasted ginger
  • 1-2 Tbsp cardamom
  • splash of rum
  • 10 oz salted mixed nuts
  • 8 oz unsalted whole cashews
  • 8 oz unsalted whole almonds

Directions

  1. Mix water, sugar, spices, and rum in a saucepan. Cook until the water evaporates, making a simple syrup.

  2. Put all nuts in large bowl. Pour syrup mixture over nuts, coating liberally.

  3. Spread nuts on parchment covered baking sheets. DO NOT ladle all excess syrup on nuts – this avoids making it a nut brittle.

  4. Bake in oven at 325, rotating pans as necessary until they reach desired caramel color and crunchiness.

  5. Cool on wire racks.
