Chicken Kabobs with Mango Jalapeño Glaze

Ingredients

  • 1 cup sweet chili sauce
  • 1 cup mango chutney
  • 2 cups barbecue sauce
  • 2 plus 3 jalapeños (seed and chop 2; reserve 3 for garnish)
  • 3 pounds chicken breast, cubed
  • Cajun seasoning
  • Salt and pepper

Directions

  1. Soak skewers in water at least an hour, preferably overnight.

  2. In a saucepan, combine the chili sauce, chutney, barbecue sauce and two chopped jalapeños.

  3. Cook on low 15 minutes.

  4. Season the chicken with Cajun seasoning, salt and pepper.

  5. Glaze with the sauce mixture.

  6. Place the chicken on skewers. Grill approximately four minutes on each side or until temperature reaches 165˚.

  7. Garnish with remaining jalapeños.
