Cornbread Waffle Sliders

Ingredients

  • 3 pounds pork butt
  • 1 cup mesquite seasoning
  • 1/2 cup each salt, pepper and brown sugar
  • 2 cups Dr. Pepper
  • 1 cup red wine
  • 2 cups water
  • Your favorite cornbread recipe
  • 1 cup brown sugar
  • 1/2 cup vinegar
  • 1/2 cup mayonnaise
  • 1 bag of slaw vegetables
  • 2 cups sweet chili sauce
  • 2 cups barbecue sauce
  • Sweet and spicy pickles for garnish

Directions

  1. Season the pork with the mesquite, salt, pepper and brown sugar. Sear in an extremely hot pan. Add Dr. Pepper, wine and water. Bake at 250˚, covered, for eight hours.

  2. Place the cornbread mixture in a waffle maker. Cut with a cookie cutter to the desired sizes.

  3. In a bowl, mix together brown sugar, vinegar and mayonnaise. Add slaw vegetables, chili sauce and barbecue sauce.

  4. Place the pork mixture on one cornbread waffle. Top with pork, then slaw mixture, then another waffle. Place a sweet and spicy pickle on top of each sandwich.
