Broccoli Rice Quiche

Ingredients

  • 1 1/2 cups cooked rice
  • 3 eggs, divided use
  • 3/4 cup shredded cheese, divided use
  • 1 Tbsp minced onion
  • 1 ( 4oz.) jar sliced mushrooms, drained
  • 1 (10 oz.) pkg. broccoli, cooked and drained
  • 1/3 cup milk
  • 1/4 tsp. ground black pepper

Directions

  1. Heat oven to 375 degrees.

  2. Combine rice 1 of the eggs and 1/2 cup of the3 cheese; mix well. Press mixture into a 9-inch pie plate; set aside.

  3. In a large bowl combine the broccoli and all of the remaining ingredients. Mix well Pour mixture into the rice-lined pie plate. Bake 50 to 60 minutes or until set.
