Economy Pound Cake

Excellent Cake. Perfect with fresh fruits!

Source: Mom. And it is an old recipe that she got from some old recipe book or a newspaper.

Cook time: 60 minutes
Serves 16 people

  • 2 C sugar
  • 1 C shortening
  • 4 eggs
  • 3 C flour
  • 1 C buttermilk
  • 1/2 tsp salt
  • 1 tsp soda
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 tsp lemon juice
  • Yellow food coloring, opt.


  1. Prepare your pan(s). Use a tube pan, greased and floured or 2 small loaf pans, greased and floured.

  2. Cream sugar and shortening.

  3. Add one egg at a time, beating between each addition. (IMPORTANT)

  4. Mix soda, flour and baking powder and sift together.

  5. Add flour mixture and buttermilk alternately.

  6. Add a drop or 2 of yellow cake coloring. Add vanilla and lemon juice.

  7. Beat at low speed for 4 minutes.

  8. Pour batter into prepared pan(s). Bake 1 hour in 350 degree oven (might take more or less time!). Check with toothpick.

  9. Set pan(s) on a cooling rack for 10-15 minutes before turning out to completely cool.
