Sarah’s Zesty Zuppa

  • 4 cups water
  • 4 cups chicken broth
  • 3 large potatoes, sliced thick
  • 2 cloves garlic, peeled and minced
  • 1 medium onion, finely chopped
  • 1 lb. spicy sausage, (Italian), browned and crumbled
  • 1 lb. bacon, browned and crumbled
  • 2 cups kale, finely chopped
  • 1 cup heavy cream


  1. In a sauce pan combine the water, chicken broth, potatoes, garlic and onion. Cook 20 minutes or until potatoes are fork-tender.

  2. Add sausage and bacon; let simmer 10 minutes. Stir in kale and cream. Add salt and pepper to taste. Let simmer 4 minutes.
