Lemon Chive Cream for Asparagus

" Cook asparagus in a single horizontal layer in a large skillet covered with water. Remove the smaller spears, which cook more quickly than the larger ones. "

  • 1/4 cup plain YOGURT
  • 1 tsp minced LEMON ZEST
  • 1 Tbs minced CHIVES
  • 1/8 tsp CUMIN SEEDS
  • Pinch of SUGAR
  • SALT to taste
  • ASPARAGUS, cooked


  1. Whisk together the CHEESE, YOGURT, LEMON ZEST and CHIVES. In a dry skillet, heat the CUMIN SEED until lightly toasted, and crush with a mortar and pestle. Add to the creamy mixture, along with SUGAR and SALT, to taste. To serve, place a Tablespoon sauce on cooked ASPARAGUS.

  2. Makes about 1 cup of sauce.
