Roasted Red Pepper Dressing

" A brilliant red color, with a dominating flavor. Perfect to use on assertive greens that can stand on their own, yet love the company of a tasty dressing. "

I used some roasted red onion in place of the shallots.

Ingredients

  • 2 sweet RED PEPPERS roasted
  • 1/4 cup LEMON JUICE (1 Lemon)
  • 1/8 cup SHERRY VINEGAR
  • 2 SHALLOTS, finely minced
  • 1/2 tsp CUMIN SEED, dry roasted
  • 1/2 cup EVOO
  • 1 tsp SALT and freshly ground PEPPER to taste

Directions

  1. Place PEPPERS in a blender, along with the LEMON JUICE, VINEGAR, SHALLOTS, CUMIN, SALT and PEPPER. Turn the blender onto puree and slowly drizzle in the olive oil from the top. Continue to whir until well blended. Transfer to a Mason jar until ready to use. Store in the refrigerator.
