Mixed Bean Salad

Ingredients

  • 1 cup GREEN BEANS trimmed
  • 1 cup YELLOW BEANS trimmed
  • 1 cup PURPLE BEANS trimmed
  • 1 GREEN PEPPER, chopped
  • 1 ONION, thinly sliced
  • 1 clove GARLIC crushed and finely minced
  • 1 Tbs DIJON MUSTARD
  • 2 LEMONS
  • 1 Tbs SUGAR
  • 1/4 cup EVOO
  • BASIL, thinly sliced
  • SALT and PEPPER

Directions

  1. Trim stem ends off of each 1 cup of green, yellow, and purple BEANS and blanch 2-3 minutes in lightly salted boiling water, or steam until tender. Refresh under cool water and place in shallow salad bowl. Combine with GREEN PEPPER and ONION. In a small bowl, prepare a dressing by combining GARLIC and MUSTARD, juice from LEMONS and SUGAR. Slowly add EVOO, and stir well to emulsify. Add BASIL, and SALT and PEPPER to taste and toss until thoroughly combined.
