Pruitt’s Hot Corn Bread

Serves 20 people

Ingredients

  • 3 C corn meal mix
  • 1 T sugar (opt.)
  • 2 1/2 C milk
  • 3 large eggs
  • 1/2 C oil
  • 1 onion, finely chopped
  • 2 1/2 C Cheddar cheese, grated
  • 1 small jar pimentos
  • 1/2 C fresh jalapeno peppers or a mix of hot, minced (or more!)
  • 1 C or 1 small can creamed corn
  • 1/4 lb. bacon, fried and crumbled (can substitute ham, chopped, or sausage, or a mixture)
  • cooking spray

Directions

  1. Preheat oven to 400F and spray a large baking pan, lasagna pan, with cooking spray.

  2. Mix the first 5 ingredients in a large mixing bowl.

  3. Mix in the rest of the ingredients. Do not over stir as it will go flat.

  4. Pour into the large prepared pan and bake for 35-40 minutes or until done.

  5. Allow to cool in pan for 15 minutes. Turn out onto a large cutting surface in order to cut into squares. Butter if you choose.
