Greek Salad

Ingredients

  • 1/2 cucumber - unpeeled, seeded, sliced 1/4" thick
  • 1 yellow bell pepper - diced
  • 1/2 pint cherry tomatoes - halved
  • 1/4 red onion - sliced in half rounds
  • 1/4 lb feta cheese - 1/2 diced
  • 1/4 cup kalamata olives - pitted
  • ***VINAIGRETTE***
  • 1 clove garlic - minced
  • 1 tsp fresh oregano - chopped
  • 1/4 tsp dijon mustard
  • 1/2 tsp salt
  • 1 oz red wine vinegar
  • 1/2 tsp black pepper
  • 2 oz extra virgin olive oil

Directions

  1. Place cucumbers, peppers, tomatoes, and red onion in large bowl.

  2. For the vinaigrette, whisk together the garlic, oregano, mustard, vinegar, salt, and pepper in a small bowl.

  3. Still whisking, slowly add the olive oil to make an emulsion.

  4. Pour the vinaigrette over the vegetables. Add feta and olives and toss lightly.

  5. Set aside for 30 minutes to allow flavors to blend. Serve at room temp.
