Char-Grilled Spicy Kofta

Ingredients

  • 2 bread slices - dry, old, and crusts removed
  • 1 lb ground lamb
  • 1/4 Spanish onion - grated
  • 2 garlic cloves - minced
  • 1 egg
  • 1/2 Tbsp cumin - ground
  • 1/2 tsp Turkish red pepper
  • 1/2 tsp sumac - ground
  • 1/2 tsp paprika
  • 1 Tbsp Italian parsley - finely chopped
  • 3/4 tsp salt
  • 1 1/2 tsp black pepper

Directions

  1. Pre-heat grill to very hot temp.

  2. To make kofta, soak bread in cold water briefly, then squeeze excess water and mix with remaining ingredients in a large bowl. Divide meat mixture into 4 portions and form into sausage shape. Refrigerate 30 minutes along with metal skewers (if using).

  3. Grill 5-8 minutes until cooked through. Remove skewers, slice and serve with pilaf or cous cous.
