slow cooker/crockpot french onion soup

Ingredients

  • 3 pounds sweet yellow onions, peeled, sliced, and cut into quarter-moons (3.2 pounds was fine)
  • 4 Tablespoons unsalted butter, melted
  • 2 teaspoons kosher salt, plus more as needed
  • Freshly ground black pepper
  • 10 cups water
  • 2 tablespoons balsamic vinegar (2+ a bit was good too)
  • 3 sprigs of fresh thyme
  • 10 oz of Asiago (easier for me to find kosher than Gruyere)

Directions

  1. Melt the butter.

  2. Slice the onions into quarter-moons (can cut them under the stove hood to avoid eye irritation).

  3. Add the butter and onions to crockpot and stir together.

  4. Cook on LOW for 12 hours.

  5. (If the onions don’t look like they’re caramelizing well enough, pour off the liquid and save it for the next step.)

  6. Add the 10 cups water (or 10 cups including the onion water reserved from previous step) vinegar, salt, freshly ground pepper, thyme and cook for 20hrs on KEEP WARM (till shabbos lunch)

  7. Serve with grated Asiago
